Lemon Cookies

Ingredients:

• ½ cup (1 stick) unsalted butter, softened

• 1 cup granulated sugar

• 1 large egg

• 1 tbsp lemon zest (about 1 lemon)

• 2 tbsp fresh lemon juice

• 1 tsp vanilla extract

• 1 ½ cups all-purpose flour

• ¼ tsp baking soda

• ¼ tsp baking powder

• ¼ tsp salt

• Optional: ½ cup white chocolate chips or a light lemon glaze
